35. Roasted Brinjal chutney: (Vankaya Pachadi)

This is also called Vankaya banda Pachadi. This is one of the  very good dishes of Telugu Food.
The Only difference is that instead of grinding the roasted Brinjal using a mixie, mash it thouroughly.
This is the traditional way of making this.
Ingredients:
Big round brinjal        1
Green chillies            3
Onion                        1
Coriander leaves  
Oil 2 tea spoons
Red chillies       3
Chana Dal     1  tea spoon
Urad Dal       1 tea spoon
Mustard Seeds 1/2 tea spoon
Tamarind  1/2 lemon sized(soak to make it soft with 2 tea spoons water)
preparation method:
Roast Brinjal on flame evenly.
Peel, mash  and keep aside.
Fry red chillies, chanadal, urad dal and mustard seeds in oil. grind them. 
Add onion, and green chilles to this and grind coarsely.
Add tamarind, salt and brinjal pulp.  
Mix evenly and garnish with green coriander.
This chutney tastes good if ground manually instead of using mixer.
